You can see the Mekong Delta on a day trip from Saigon (Ben Tre or Cai Be, about two hours away), but two or three days is better: overnight in Can Tho so you reach the Cai Rang floating market at dawn, then continue to Chau Doc or by river to Phnom Penh.

December to April is dry, with the fruit season starting in May. From about August to November the river is high: the flood season brings fishing and floating-rice scenes around Chau Doc, but some small canals and fields are under water.
