UK citizens must leave Vietnam no later than the exit date issued on their visa to Vietnam, unless the visa has been successfully extended. Overstaying a Vietnam visa leads to fines, and heavy fines in serious cases. Keep track of those dates to make sure you don’t overstay any of them.
